Comfort food is called comfort food for a reason. For me gluten free mac and cheese is one of my favorites. I have a recipe that I absolutely love for gluten free one-pot, no-drain macaroni and cheese, but sometimes I just really want creamy cheesy noodles with crispy buttered breadcrumbs on top.

When I was about 8, I had an auto-immune illness that had me sick for several months. I still remember that moment when I finally felt good enough to eat. Of course I went right to my favorite comfort foods!

One of the first things that sounded good to me was macaroni with my mom's homemade cheese sauce. I remember eating those 'cheesy noodles', as we call them in our home now. Nothing beat finally feeling like a kid again! I remember I was running around and playing with my siblings as I left the dinner table after finishing a plate of homemade mac and cheese. One of my favorite memories!

My mom's homemade cheese sauce is super easy to make, and it is even better when you load the sauce and noodles into a casserole dish and top them with toasted breadcrumbs, butter, and of course MORE cheese.

Something else that I love about this gluten free baked macaroni and cheese is that you can really add whatever cheese is your favorite. Usually I use straight up cheddar, with maybe a little Monterrey Jack to make it a bit more gooey. You can even add a bit of cream cheese!

Just make sure whatever cheese you add is grated (or cut into small cubes if it is too soft to grate) and turn off the stove before you add it. Just let the residual heat in the sauce gently melt the cheese. Adding the cheese this way helps to prevent it from curdling, separating, or doing any manner of funky stuff. The cheese also melts better if you grate it yourself, then it isn't covered in that anti-caking powdery stuff which can cause aforementioned funky stuff to happen.

Ingredients

  • 1 pound Gluten Free Elbow Macaroni
  • 1/2 cup Butter
  • 3/8 cup Gluten Free Rice Flour, Or gluten free rice based AP blend without xanthan gum
  • 4 cups Milk
  • 1 teaspoon Dijon Mustard
  • Salt and Pepper, To taste
  • 3 cups Grated Cheese, About 9 ounces
Breadcrumb topping:
  • 3/4 cup Gluten Free Breadcrumbs, Homemade or store-bought
  • 3 tablespoons Butter

Directions

  1. Cook the gluten-free elbow macaroni according to the package directions, to al dente.
  2. In a heavy bottomed saucepan melt the 1/2 cup butter and whisk in the flour. Continue to cook, while stirring, until the flour turns a nice golden brown. About 8-10 minutes.
  3. While whisking, stir in the milk. Add the mustard and season to taste with salt and pepper. Continue to heat stir until the sauce is thickened.
  4. Remove from heat and stir in 2 cups of cheese. Stir until melted.
  5. Lightly grease a casserole dish and spoon the noodles and cheese into it.
  6. Sprinkle the top with the seasoned breadcrumbs, drizzle with the melted butter, and top with the remaining 1 cup of grated cheese. Bake at 350 for 10-15 minutes or until the cheese is melted and the crumbs are crispy.

I survived on gluten free macaroni and cheese while in Ireland. It somehow became our go-to meal and also turned into the dinner we made after a long day hiking in the mountains.

And

We had made a conscious decision to stay in places with full kitchens while on holiday. That way, we didn’t have to deal with eating out all the time and worry about what to eat for every meal.

It was seriously the best decision ever and we’ll travel this way from now on. As we moved from location to location, at the end of each stay we had to clear out the fridge and use all our leftovers.

This Prosciutto Gluten Free Macaroni and Cheese was the product of what was left in our fridge the first time. // Seriously. Get in my belly.

It was so good, sparing no calories (I did just climb two mountain peaks that day) with all that butter, cheese and delicate salty prosciutto.

Sprinkled with some crushed fresh black pepper before serving, it was THE PERFECT dish to warm me up.

It also fueled me with badly needed calories (since I had not eaten the entire day). // Extreme poor planning and didn’t make that mistake again.

Last time I was in Ireland, I survived on prosciutto. Specifically, these prosciutto-wrapped-in-melon bites.

Something about Ireland and craving prosciutto while I’m there every time?? If we end up moving there down the road, be prepared.

Best Tips for this Gluten Free Macaroni and Cheese

  • Don’t forget to thoroughly rinse pasta after cooking to keep it from over-cooking AND to remove the excess starch. That’s the best way to prepare gluten-free pasta.
  • For those needing vegetarian (because really I do understand), simply omit the prosciutto from this recipe, it’ll still be amazing.

I struggle with eating meat at times (mainly chicken breasts), but I don’t have any problem eating things like deli meat, prosciutto, salami, sausage, etc. I love it all. // So odd I know.

During an extended vacation away from home, 99.9% of the time I get “glutened” at some point. Then I need to come home, slash dairy out of my diet, and recover.

Guys, I may have made history because this time that was not the case. Actually, this was the first time EVER I’ve come home and felt awesome! // Except for the fact that I’ve been waking up at 5 a.m., craving potato chips instead of breakfast food. But that’s another problem entirely.

I take comfort in knowing that this gluten free mac and cheese can easily be made dairy-free, and it tastes just as amazing with that swap. // I mean, you know me, I love the real butter and cheese when I can eat it, so not being glutened, I’m eating the reallll thing. 😉

Ingredients:

  • 4 cups gluten-free penne pasta, cooked (or favorite pasta of choice)
  • 1 cup whole milk (can use dairy-free milk if needed)
  • 3 Tablespoons butter (or dairy-free butter substitute)
  • 1 1/2 cup sharp cheddar cheese, shredded (or dairy-free cheese substitute)
  • 1/2 cup shredded parmesan cheese
  • 5-6 prosciutto slices, roughly chopped
  • Freshly ground black pepper to taste

  • 1. In a large saucepan over medium heat add cooked pasta, milk, butter and cheese.
  • 2. Stir until butter and cheese are fully melted. (Apprx 5 minutes)
  • 3. Mix in prosciutto, leave on low heat for another 2-3 minutes.
  • 4. Crush freshly black pepper, and serve immediately.
Notes: Easily make this gluten free macaroni and cheese vegetarian by subbing out the prosciutto.
